Easy Fudge Sauce

From: Chocolate American Style
- 4 Tbsp. Unsalted Butter (2 oz.)
- 1 ½ oz. Unsweetened Chocolate
- ½ cup Light Cream or Whole Milk (4 oz)
- ¾ cup Sugar (6 oz.)
- ¼ cup Unsweetened Cocoa Powder (.75 oz)
- Pinch Salt
- 1 tsp. Vanilla Extract
Place the butter and chocolate in a heavy 1-quart saucepan. Set the pan over medium-low heat and melt the butter with the chocolate, stirring until smooth.
Stir in the cream. In a small bowl whisk together the sugar, cocoa powder and salt. Stir the sugar mixture into the chocolate and butter mixture.
Bring the sauce to a boil, stirring constantly, then remove it from the heat. Stir in the vanilla.
Cool the sauce to room temperature, then store it, covered, in the refrigerator. Reheat the sauce over low heat or in the microwave.
