What motivated you to open a chocolate business? |
 |

I have worked since I was
thirteen years old with a lot of passionate chefs—mostly French.
I worked in France twice and Spain before coming to the United States
in ’96 and starting the company in ’99. |

Did you have any formal training in chocolate making? |

I went to a school in Denmark
that offered a combined pastry and chef program in four and a half
years. |

Where
do you get your inspiration for the different flavors and textures
you include in your chocolates? |

A lot of my flavors are from
the savory kitchen and textures are very important to us. That is
why we do not just enrobe everything but also hand mold. |
