What
motivated you to open a chocolate business? |

The passion for chocolate and for my greedy throat are the only reasons that made me start this adventure.

Look for Italian flavors, such as "Barolo Chinato" red wine, "Passito di Pantelleria" sweet white wine, balsamic vinegar, tobacco, and various teas or oriental spices and flowers. |

Did
you have any formal training in chocolate making? |

I took part in lots of profesional courses with French chocolate teachers at "L'Ecole du Grand Chocolat" and Italian chocolate teachers Gianluca Fusco and Luca Montarsino.

Where
do you get your inspiration for the different flavors and textures
you include in your chocolates? |

My inspiration comes from historical and traditional recipes, put together with modern technology, plus my typical Italian imagination.

had to describe your product line in a couple of sentences, what would
that be? |

I shall discribe my product like this: Classic and extravagant, introducing innovations, revolutionary and with an outline of sophistication.

What
is your personal favorite out of all the products you make and why? |
 |
 |
 |
 |
Being greedy, and I am very much so, I change the products very often, but spiced hot chocolate with fresh cream is never missing. Also certain pralines made with passion fruit, saffron or tobacco.
