Andrew Shotts took his love
for chocolate from dream to reality—and for that we are all grateful.
His chocolates are based on traditional flavors and textures and presented
in simple squares of chocolate confection, decorated with colorful,
eye-catching designs. |

What
motivated you to open a chocolate business? |
It was dream I had since I
went to work in France in 1996. |

Andrew Shotts of
Garrison Confections takes the classic English toffee one step further
using lots of butter to create a crunchy-not-sticky, rich toffee covered
in a not-too-sweet milk chocolate and generously sprinkled with nuts.
It is hard to eat just one. |

Did
you have any formal training in chocolate making? |
I trained as an Executive
Pastry Chef. |
Where
do you get your inspiration for the different flavors and textures
you include in your chocolates? |
Inspiration comes from imagination…I just think of two flavors that really go well together.
If you
had to describe your product line in a couple of sentences, what would
that be? |
Hand-crafted, well-thought-out
artisanal chocolate made with innovative techniques, while respecting
classic methods, and using the best ingredients I can find. |
What
is your personal favorite out of all the products you make and why? |
That is a love/hate thing:
chocolate-covered caramel popcorn. I love it, but hate it, because when
I start eating it, I cannot stop…I can eat two pounds in a
day EASILY! |
